The mackerel are caught during the winter season, when the fish are at their fattest, and are prepared fresh and cooked in a court-bouillon, respecting traditional methods. Trimmed and placed in tins by hand, with five flavourings - lemon, carrot, onion, capers and gherkins - these generous fillets offer extraordinary finesse and lightness. The marinade, made with Muscadet, an appellation d'origine contrôlée dry white wine, brings a delicate freshness and a hint of acidity to the melt-in-the-mouth flesh.
